Captain Fairfield's Crunchy Side

We're big time cookie aficionados here in Kennebunkport, but sometimes we like to shake things up with a walk on the crunchy side. Crunchy like granola, that is. After some serious taste testing in the kitchen with a veritable buffet of mix-in options, our favorite is this Peanut Butter Granola. Make a batch at home or enjoy it with us in the afternoons at Captain Fairfield Inn! 

Peanut Butter Granola


  • 1/2 cup brown sugar
  • 1/2 cup honey
  • 1/4 cup canola oil
  • 4 cups old fashioned oats
  • 1/2 tsp cinnamon
  • 1/4 tsp salt
  • 2 cups chocolate chips
  • 1/2 cup peanut butter
  • dried cranberries to taste


Preheat oven to 250 degrees. 

Combine brown sugar, one and canola oil in a small sauce pan over medium heat. Cook, stirring often until sugar is dissolved. Add peanut butter and mix until just smooth, then pour mixture over oats and add cinnamon and salt. Stir until oats are evenly coated. 

Spread granola mixture over a cookie sheet (sprayed with cooking spray) and press mixture down. Place in oven and bake for 1 hour, stirring every 15-20 minutes. 

Remove from oven and allow to cool completely before breaking apart and mixing in chocolate chips and cranberries. Store in a ziplock bag or other air tight container.
