Born of a late-night cookie craving, Goodnight Fatty started as a pop-up and quickly won the hearts and stomachs of those wanting a sugar fix in Salem. The bakery, and its cookies dubbed "fatties," has bounced around Salem, coming to rest in its new permanent home at 1 Washington Square. Goodnight Fatty began in 2016 as a pop-up in a coffee shop after the owners, Jennifer and Erik Sayce, dreamed up the idea after walking home from dinner. Turns out they weren't the only ones with a late-night sweet tooth, as customers flocked to get a the best cookies in Salem and a glass of milk. Snickers, Oreos, S'mores, peanut butter, brownies all make their way into Goodnight Fatty's cookies, with flavors rotating nightly. After the success of the pop-ups, the Sayces found a permanent space, but still operated as a pop-up. The space was used during the day as a business conference room, so after the office workers went home for the day, the bakery employees had to set up the mobile bakery for the weekend. Now, Goodnight Fatty has its own space, in a former carriage house owned by the Peabody Essex Museum.
